1 lb. boneless, skinless chicken breasts

4 cups chicken broth

1 onion, chopped

2 cloves garlic, minced

1 large carrot, peeled and diced

1 celery stalk, diced

1 cup frozen corn kernels

1/2 cup heavy cream or half and half Parsley leaves for garnish (optional) Salt and pepper to taste Directions: 1. In a large pot over medium heat, combine the chicken broth, onion, garlic, carrot, celery, and corn. Bring to a simmer and cook for 10 minutes. 2. Add the chicken breasts and continue cooking until cooked through, about 5-7 minutes more. 3. Remove the pot from heat and use an immersion blender or regular blender to puree until smooth. If using a regular blender, be sure to work in batches and avoid filling the blender more than halfway each time. 4. Return the soup to the pot and stir in the cream.
