For me, one of my all-time favorite comfort foods is creamed mashed chicken soup. There's something about the creamy, richly flavored soup that just makes me feel happy and content. Plus, it's the perfect thing to warm me up on a cold winter day. To make my creamed mashed chicken soup, I start by simmering some chicken breasts in broth until they're cooked through. Then, I remove the chicken from the broth and mash it up with some cream cheese and sour cream. I add the mashed chicken back to the broth along with some chopped green onions and serve it up with some fresh croutons on top. This soup is so comforting and delicious, and it's sure to hit the spot every time.

Ingredients: 1 lb. boneless, skinless chicken breasts 4 cups chicken broth 1 onion, chopped 2 cloves garlic, minced 1 large carrot, peeled and diced 1 celery stalk, diced 1 cup frozen corn kernels 1/2 cup heavy cream or half and half Parsley leaves for garnish (optional) Salt and pepper to taste Directions: 1. In a large pot over medium heat, combine the chicken broth, onion, garlic, carrot, celery, and corn. Bring to a simmer and cook for 10 minutes. 2. Ingredients: -1.5 lbs boneless, skinless chicken thighs -1 cup diced onion -4 garlic cloves, minced -3 carrots, peeled and diced -2 celery stalks, diced -1 tsp dried thyme -1/2 tsp salt -1/4 tsp black pepper -4 cups chicken broth -1 cup heavy cream -2 tbsp chopped fresh parsley leaves Instructions: 1) In a large pot or Dutch oven over medium heat, add the chicken thighs and cook until browned, about 4 minutes per side. Remove from heat and set aside. 2) Add the onion, garlic, carrots, celery, thyme, salt, pepper and chicken broth to the pot. Bring to a boil and simmer for 15 minutes. 3) While the soup is simmering, shred the cooked chicken thighs with two forks. 4) Add the shredded chicken and cream to the soup and stir to combine.
