-1.5 lbs boneless, skinless chicken thighs -1 cup diced onion -4 garlic cloves, minced -3 carrots, peeled and diced -2 celery stalks, diced -1 tsp dried thyme -1/2 tsp salt -1/4 tsp black pepper -4 cups chicken broth -1 cup heavy cream -2 tbsp chopped fresh parsley leaves Instructions:

1) In a large pot or Dutch oven over medium heat, add the chicken thighs and cook until browned, about 4 minutes per side. Remove from heat and set aside. 2) Add the onion, garlic, carrots, celery, thyme, salt, pepper and chicken broth to the pot. Bring to a boil and simmer for 15 minutes. 3) While the soup is simmering, shred the cooked chicken thighs with two forks. 4) Add the shredded chicken and cream to the soup and stir to combine. Simmer for an additional 5 minutes. 5) Serve in bowls and top with fresh parsley leaves if desired. Enjoy!
