In a large pot over medium heat, sauté onions and garlic in olive oil until softened. 2. Add in the carrots, celery, bay leaf, chicken stock, rice, almond milk, salt and pepper. Bring soup to a boil. 3. Reduce heat and simmer for 30 minutes. 4. Remove bay leaf before serving. Top with chopped roasted chicken.

1 cup uncooked white rice 1 (10 3/4 ounce) can condensed cream of chicken soup 1 (14 1/2 ounce) can chicken broth 1/2 cup milk 4 tablespoons butter 1 teaspoon salt 1/4 teaspoon black pepper 1 (3 pound) bag frozen southern style diced hash brown potatoes, thawed3 cups cooked, cubed, or shredded, cooked chicken breasts 1 (8 ounce) container sour cream 1/2 cup thinly sliced green onions* Instructions: Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish. Cook rice according to package directions. In a large saucepan, combine cooked rice with cream of chicken soup, chicken broth, milk, butter, salt, and pepper. Cook over low heat until heated through. Spread half of the mixture in the prepared baking dish. Arrange the hash brown potatoes over the rice mixture. Top with cooked chicken breasts and sour cream. Sprinkle with green onion slices. Pour remaining rice mixture over sour cream. Bake uncovered for 25 minutes. Serves 6-8.
