Mashed chicken soup that's creamy and delicious!

Ingredients:

  • 1 pound boneless, skinless chicken thighs
  • 2 cups chicken broth
  • 1 cup frozen corn
  • 1/2 cup heavy cream or half and half
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt and black pepper, to taste

Instructions: 1. Heat a large pot over medium heat. Add the chicken thighs and cook until browned, about 3 minutes per side. 2. Add the chicken broth, corn, heavy cream, garlic powder, onion powder, salt and black pepper to the pot. Bring to a boil and then reduce the heat to low and simmer for 10 minutes. 3. Use an immersion blender or regular blender to blend the soup until it's creamy. Serve hot.

  1. In a large pot or Dutch oven, combine the chicken breasts, chicken broth, milk, flour, thyme, salt and pepper.

  2. Bring to a simmer over medium heat and cook until the chicken is cooked through, about 10 minutes.

  3. Remove the chicken from the pot and chop into small pieces. Set aside.

  4. Add the carrots, celery, onion and garlic to the pot and simmer until tender, about 10 minutes.

  5. Stir in the cream of chicken soup and cooked chicken until well combined. Season with additional salt and pepper if needed. Serve warm with some crusty bread for dipping!
